We are fully moved in to our new house and I made my first breakfast this morning, which really made it feel more like home. If you know Cayce and I at all you know we LOVE breakfast and we pretty much have religiously made it every weekend since we have been together. Since moving in we have been so busy waking up and doing projects that I haven't had a chance to make anything but this morning we slept in made coffee and enjoyed our new house with sun pouring in front room. We had a big meal of bacon, ranch scrambled eggs for Cayc and eggs over medium for me and some yummy rosemary breakfast potatoes that I fried in the bacon grease - healthy right!?!?! We are both fatappy (pronounced faa-tap-ee and short for fat and happy) now watching march madness on the tube, what a great day so far! Here is my recipe for Homestyle Rosemary Breakfast Potatoes.
Homestyle Rosemary Breakfast Potatoes:
- 2 red potatoes diced
- 6 Tablespoons bacon grease
- 1/2 teaspoon salt
- 1/4 teaspoon dried rosemary
Heat oil in large skillet at medium heat. Add diced red potatoes and stir occasionally for 15 minutes or until cooked through - potatoes should be somewhat translucent. Drain cooked potatoes on paper towel and add to medium sized bowl. Add salt and rosemary to bowl and toss. Serve with ketchup.
